Son of the oldest local traditions, it is produced with the same artisan systems used in the early twentieth century by cheesemakers from the high Bergamo area. The seasoning is long, vers 50 days, and this is the reason for the unconditional aroma and the full and tasty taste. The careful processing gives a creamy consistency close to the rind and slightly crumbly in the center.
